A party or fiesta in the Philippines would not be complete without a Lechon gloriously displayed at the buffet table. Lechon is suckling pig that is spit-roasted over charcoal for hours. The moist meat is flavoured with aromatics such as scallions and lemongrass, and the pork skin is crisped to perfection. It is served with vinegar-laced liver sauce and is best eaten with steamed rice. It’s so good that world-renowned chef and bestselling author Anthony Bourdain called Lechon in Cebu City, the “best pig ever.”
